Deep dish peach pie

Having leftover dessert for breakfast is one of my favorite things. This pie was killer both last night and this morning. In fact, Fatty said it was maybe my best pie ever. Uh huh. If you have peaches like me, I highly recommend you do this, too.
Make your favorite pie crust, or buy one - whichever you prefer. Roll it out into a deep dish pie pan. My pan is 9" wide and at least 2" deep. Take sliced peaches (I used about 6 cups) and mix them with a 1 tsp. lemon juice, 1/2 tsp. of cinnamon, 3/4 cup sugar and 3 tbsp. flour. Dump the peaches into the pie pan. Now make the topping - 1 cup flour, 2/3 cup brown sugar, 1/2 cup cold butter mixed together until it's crumbly. Sprinkle on top. Cover the edges of your pie with a strip of aluminium foil (to prevent burning) and bake at 425 degrees for at least 45 minutes. The time will vary depending on how deep your pie is and the diameter of your pan. My pie took over an hour, but I started checking at 40 minutes. You are looking for a nicely browned top and bubbling juices. Watch it towards the end to make sure the top isn't getting too brown. If it is, cover it with foil. Best served warm. And then still good cold with a nice cup of coffee the next morning.

Lucky for me, I picked up an entire basket of peaches at the farmer's market this weekend. I had planned to make a pie, and this recipe sounds tasty!

I 'was' a peach pie lover until my local orchard lady suggested that nectarine pie is even better - and you know what - she was right, I am a convert. #1, you don't have to skin the nectarines.............
Having said that, I am now the proud owner of four ripe MA hilltown peaches and a quart of low bush wild blueberries from Granville, MA.
Actually I've been thinking Fresh blueberry pie with peaches too.

we're having a weird growing season here, spring was too cold. so i don't think the trees in our back yard will produce this year. but pretty soon we should have some other semi-local ones (from the other side of the state), and i'm SO gonna try this!!

I made your pie last night with some peaches I picked up at the veggie stand down the road. It was wonderful for dessert and even better this morning for breakfast. I'm so glad to know there are others who like pie in the morning too!

Made this pie tonight with farmer's market peaches! Yum! Love the crumb topping. I will be making this again! Just one question, did you bake the crust first, then add the peaches? The bottom crust on the one I baked was a little soggy (but still good!! ;) ).

that sounds fantastic. i just cannot get enough of the fruit desserts this summer and i have been wanting a good peach pie to add to the repertoire!
glad things are calming down over there. i was nodding throughout that post... i feel that same sense of ohmyword, time is going SO fast, and it can be paralyzing! i hope we can both squeeze all the goodness out of the rest of this season!
