Raspberry scones

Seeing as it is Saturday, I thought I'd tell you about my second biggest success of last weekend.  The biggest success, of course, was completing Hazel's new bed, but really that is neither here nor there.  The second biggest success was culinary and deserves a post of its own.

Sunday morning I found myself craving - and I mean I-need-it-right-now craving - some kind of fruity baked good.  For a minute, probably less, I considered putting the girls back in the car (we'd just arrived home from church) for a quick trip to the bakery, but I couldn't be bothered.  Kate had a friend coming over and Jane was set to meet up with a pal of hers and Fatty was driving home from a 50 mile mountain bike race in Georgia (an entirely different story all together).  It just seemed like too much to manage.  I briefly considered raiding the frozen chocolate chip cookie dough in the freezer for a quick fix, but I knew that it wouldn't do.  There was no way chocolate chips were going to fill the need for warm, sweet fruit so I took a quick look in the fridge.  Raspberries!  They are my favorite berry and didn't I just see a recipe for some kind of berry scone? Yes, indeed.  Raspberry scones!

I quickly read the recipe and sighed at the sight of buttermilk on the list of ingredients.  I am not a good southern cook who stocks this at all times.  My brother might have some on hand, but that's another car ride so, that is not going to cut it.  Then I remember reading about making-do with milk and, what was it?, as a buttermilk substitute.  A quick google search and I have my answer: vinegar (or lemon juice, in a pinch).  Now I'm in business.

The oven is preheated by the time I have the dough out of the food processor.  I fold the raspberries in and three minutes later, after sprinkling sugar on top, they are in the oven.  Eighteen minutes later, I brew some more coffee.  Five minutes after that, the craving is more than satisfied.  Did these ever do the trick!

If you find yourself craving a little savory plus sweet, give these scones a try.  The dough is wonderfully flavored and not too sweet - I imagine it would work well with any number of additions.  The only change I would make is to sprinkle the tops with raw, or turbinado, sugar if you have it instead of your garden variety white.  I think it'd be a lovely touch, but the white works well enough as is.

These scones look great and I am sure they tasted even better. I have loads of blackberries so I am away to try this recipe using them instead of raspberries.

I just made them this morning, thanks for the wonderful idea. They look and smell amazing. Hopefully they taste just as amazing, once my little lady is all done nursing I am going to dive right in.
I made mine without berries (all I had was blueberries in the fridge and the boys in my house wont eat them)but I am planning on putting a scoop of homemade freezer jam right in top.
Ok I better go eat them while they are still warm.

awesome. i'm not a very skilled baker, but i think i could handle this. my friend turned me on to tate's bake shop muffins (any sort of berry would do), and i feel like for the first time i can whip up something good and fruity easily and quickly. i'll try these.

Scones has become a staple favorite around here... Just made some the other morning. I love how quickly the come together and they satisfy my early morning carb/sugar/butter fix ;)

We just finished eating tea and biscuits but now I'm hungry all over again. No raspberries in my house though - I'll have to wait until after we've done the grocery shopping (maybe these will be my Sunday breakfast).

Well...now I'm off to the store after breakfast for berries for scones. Shame on you! I rarely have buttermilk in the house so I picked up Saco cultured buttermilk blend for cooking and baking (powdered). I picked mine up in WM in the baking isle...it has served me well. Thanks for the great idea!

Thought I woiuld drop by again and say the blackberry scones worked a treat. I just used a handful and boy did they taste good, even though the dough looked a bit purple in places.

Yum...sitting here on a Sunday morning with my coffee, I am definitely craving anything warm and sweet from a bakery! These look wonderful. I am also intrigued with the oatmeal rasberry scones from Joy the Baker. Perhaps I need to try both!!

I made them Sunday morning using the blueberries that we picked this summer
and had in the freezer. They worked out very well and looked just like yours.
I had dried buttermilk - you just add water to it and mix. It's easy to store and then you always buttermilk on hand.

I often do have buttermilk, but I often don't too and rely on the milk vinegar trick.

I just made these scones with white whole wheat flour and frozen blueberries and they were delicious! I'm going to make raspberry ones next.

Yummy! Your scones look delectable! We make a version with homemade raspberry jam...like the Grand Central Bakery's Jammer (think thumbprint cookie meets scone.)

We usually keep a dry butterball powder on hand in the refrigerator for soda bread and jammers. If you get some, find a website that tells you a break down of how to make 1 cup quantities, as you usually don't need more than that. We use Azure Standards buttermilk powder and they have various recipes for reconstitution.
